Parma 2064 Parmigiano Reggiano (36 month and 24 mth) is produced by the Agrinascente cooperative in Fidenza, Emilia-Romagna, under strict Consorzio del Formaggio Parmigiano-Reggiano PDO regulations. This designation guarantees origin, traditional production methods, and quality standards—from the cows’ diet of grass and local hay to the defined ageing process and regional production zone.
The “2064” mark is the producer’s official code, stamped on every wheel as a sign of authenticity and traceability.
Made with just milk, salt and rennet, the cheese is crafted in copper vats and aged on wooden shelves for a minimum of 30+ months or 24 mths. At 30+ Months stage, the cheese shows greater
concentration and complexity, with a more pronounced crystalline structure. Expect deeper savoury intensity, with notes of toasted nuts, caramel and umami, balanced by dry, crumbly texture and a long, lingering finish.
Best enjoyed in shards to appreciate its texture, it also adds depth when finely grated over pasta, risotto or soups. Serve with aged balsamic, figs or pears, and pair with structured whites, sparkling wines, or lighter styles of red.
